For those with dietary restrictions: Be sure to list any allergies/dietary restrictions in your registration details. Soy milk will be provided at all coffee/tea breaks. For those whose dietary restrictions require special attention to the banquet entrees (e.g., you want the chicken but you are lactose-intolerant), select the preferred entree and include "lactose-intolerant" in the dietary restriction information. You will receive a special banquet ticket and you will receive an appropriately prepared entree.

Salad

• Poached pear, arugula, and Belgian endive salad (Maytag Blue Cheese, Candied Walnuts, Dried Cranberries, Balsamic Vinaigrette)

Entrée Choices

• Chicken entree: Breast of chicken Mediterranean (Spinach, Mushroom and Fontina Cheese Stuffed Breast of Chicken, Garlic and Rosemary Roasted Potatoes, Marsala Sauce)
  

• Salmon: Dill crusted salmon (Saffron Israeli Couscous, Tomato Coulis)

• Vegetarian: Quinoa and Grilled Vegetables (Coconut Curry Sauce; have asked for tofu or appropriate beans to be added)

Dessert

Two dessert options will be presented at each table; choose your dining companions carefully for optimal enjoyment (chocolate or a fruit cobbler).
